Grape varieties: 97% Syrah and 3% Viognier. The vines are cane-trellised. Harvest: 100% by hand, between 23 September 2021 and 2 October 2021 Vinification : Macerated traditionally in temperature-controlled stainless steel, destemmed and extracted with daily pumpovers and daily crushes for 3 weeks, then racked and pressed. Malolactic fermentation in barrel. Ageing: 18 months in 225-litre French oak barrels. 60% new oak, 20% second-use, 20% third-use.
Intense purple with flashes of strong, dark purple
Dominated by tertiary notes of toasted bread and smoke, it opens up as it aerates with notes of black pepper and blackberry jam
Beautifully concentrated, with all the aromatic richness of the nose. The whole is complex, and presents excellent tension, lingering with remarkable freshness
Serve at 16 - 18°C
Can be aged for 6 to 10 years.
Aged meats, hare à la royale, caramelised spare ribs, beef stir fry with soy sauce and ginger.
