Grape varieties: 53% Syrah, 20% Grenache, 15% Carignan, 12% Mourvèdre. Harvest: By hand, from 23 September to 6 October 2021. Vinification : maceration and carbonic maceration (Carignan). Press juice in carbonic vinification to gain concentration. Traditional vinification for the Syrah, Grenache, and Mourvèdre varieties. Macerated for approximately 3 weeks. Malolactic fermentation in tank, racking and barrelling down. A portion of the Syrah is whole-cluster fermented in Kvevri (traditional Georgian terra cotta pots). Malolactic fermentation on marc. Ageing: 12 months in 225-litre French oak barrels. 35% new oak, 54% second-use. 15 months - 11% aged in pots (Syrah fermented in Kvevri).
Dark garnet with flashes of deep black.
Frank and expressive, it offers a highly complex bouquet marrying freshness with floral (iris and violet) and spiced notes (pepper, thyme and cacao), as well as powerful black fruit aromas (blackcurrant coulis, wild bramble, stewed plum, and blueberry).
The onset is frank, rounded, and definitively elevated, with very fine, silky tannins. A full mid-palate opens onto an elegant, balanced finish with truly exquisite length.
Serve at 14 - 18°C
Can be aged for 3 to 12 years.
