AN EXCEPTIONAL TERROIR
The AOC Bourgogne Pinot Noir is the regional appellation of Burgundy, one of the most prestigious wine-growing regions in France. Created in 1937, this AOC produces red wines from Pinot Noir, which finds its cradle here and gives birth to all the great red wines of this vineyard. Its predominantly limestone soil, nuanced with clay and marl, and its cool climate, produce wines of great finesse with complex aromas.
MAISON CASTEL’S KNOW-HOW
Maison Castel works hand in hand with partner properties in 2 regions: Hautes Côtes Beaune and Côte Chalonnaise. The Maison Castel teams meticulously follow traditional vinification after destemming. Pre-fermentation maceration for 5 days to obtain maximum fruit, then pumping over and punching down in alcoholic fermentation (2 weeks). Malolactic fermentation on clean wine after devatting. 30% of the cuvée is aged in French oak barrels for 12 months (from various coopers and heats) in our Maison Castel cellar, to provide more structure.

The ample and delicate palate reveals woody notes mixed with fruity aromas. The whole continues with silky tannins and a fruity finish
Serve between 14 and 16°C
Can be aged for up to 5 years
Poultry, roast meats, fish; or cooked cheeses (gouda). An ideal pairing would be veal sauté with fine herbs
