MAISON CASTEL’S KNOW-HOW
Maison Castel works hand in hand with partners properties in 3 regions: Maconnais, Côte Chalonnaise and Chablisien. The assembly of these different complementary regions brings more complexity and expression to this cuvée. The Maison Castel teams meticulously follow traditional winemaking: direct pressing, settling then fermentation at controlled temperature (18-20°C) in concrete/stainless steel vats. 25% of the cuvée is aged in French oak barrels for 12 months (from various coopers and heats) in our Maison Castel cellar, to express the roundness and aromas of Chardonnay.
