The Pouilly Fume AOC is located in the Loire Valley, and is, along with Sancerre, the appellation in which the Sauvignon Blanc delivers its finest mineral expression.
Following a pneumatic pressing, a short pre-fermentation maceration takes place. The vinification is then carried out in stainless steel vats at a low temperature in order to preserve the primary aromas of the Sauvignon Blanc.
