These feature among the best known appellations in France, and are as capable of dazzling the most knowledgeable wine enthusiast as they are of impressing anyone looking for something new and different. Pouilly Fumé

Appearance : slightly golden
Nose : mineral notes of gunflint and lemon
Palate : freshness and finesse
Serve : between 10-12°C
Best enjoyed : within 1-3 years
Food-wine pairings : as an aperitif or paired with fish, seafood, shellfish and poultry in a creamy sauce
Recommended dish : Fish Waterzoï (a creamy stew)


The Pouilly Fume AOC is located in the Loire Valley, and is, along with Sancerre, the appellation in which the Sauvignon Blanc delivers its finest mineral expression.


Following a pneumatic pressing, a short pre-fermentation maceration takes place. The vinification is then carried out in stainless steel vats at a low temperature in order to preserve the primary aromas of the Sauvignon Blanc.
